Julia Wolfson Takes the Lead and Refines Menu at Hollywood
Restaurant
LOS ANGELES--(Business Wire)--
AMMO, Amy Sweeney's popular neighborhood restaurant in Hollywood,
proudly announces the arrival of Julia Wolfson as its new Executive
Chef.
Wolfson, a native of Orange County, has recently returned from a
fruitful five year culinary career in Manhattan, where she gained
experience working in the restaurants of Chefs Eric Ripert, Dan Barber
and Rocco DiSpirito - three influential talents that helped fuel her
passion for cooking.
Owner Amy Sweeney, who created the original AMMO in 1997 as a
modest storefront on Highland Avenue serving her market-inspired foods
for take-out, has deftly modified the restaurant over the years to
meet the city's changing needs. Four years after completing a second
expansion of the dining room and full remodel in 2004, Sweeney felt a
growing need to bring on a chef who shared her sensibilities and could
lead the kitchen. "I knew that Julia was the perfect fit for AMMO as
soon as she cooked for us," says Sweeney. "She not only creates food
for the senses, but she cooks from the heart. You can see it in every
plate that leaves the kitchen, delicately filled with color, texture
and beautiful ingredients." With the arrival of Wolfson, Sweeney is
confident of AMMO's recognition as a neighborhood restaurant that
takes its food, wine and service very seriously. Known as a designated
favorite among the entertainment industry lunch community, AMMO now
promises to be a standout dinner destination among the growing
pantheon of Los Angeles bistros.
Wolfson revamped the menus at AMMO within her first month, making
use of the abundant sources that Southern California has to offer.
Lunch items include Heirloom Tomatoes with Burrata, Basil and Shiso;
White Corn and Radish Salad with Duck Confit, Fennel, Pickled Red
Onions and Cilantro; and Pan Seared Tasmanian Sea Trout with Roasted
Cippollini, Pea Shoots, Summer Squash and Citrus Vinaigrette. AMMO'S
dinner menu features Wolfson's Crispy Niman Ranch Pork Belly with
Roasted Shallots, Pickled Cherries and Charred Grapefruit; Salt
Roasted Baby Beets with Fromage Blanc, Niman Ranch Bacon, Walnuts and
Frisee; Pan Roasted Sonoma Duck Breast with Toasted Bulghur, Peaches,
Kumquats, Honey Gastrique and Duck Jus; and Sauteed Sea Scallops with
Grilled Endive, Leek-Radicchio Salad and Watermelon Gazpacho.
A graduate of New York University, Julia worked in the legal
department of the American Civil Liberties Union (ACLU) and planned to
attend law school, until her growing pursuit of the culinary arts gave
way to her exploration of restaurant career. Cooking became a serious
vocation for Julia while working for Rocco DiSpirito at Union Pacific.
She then studied the art of fish cookery at Le Bernardin, and the
nuances of operating small neighborhood restaurants at Manhattan's
Blue Hill and applewood in Brooklyn. When her husband, Jeremy Berlin,
was offered the Sous Chef position at Gordon Ramsey at The London West
Hollywood, Wolfson was eager to return to California and find her own
restaurant home where she could showcase her love for simple seasonal
cooking. AMMO's guests have enthusiastically embraced Julia's
homecoming and her cooking.
