I mean, we already know that some organisms live in the dark depths of the ocean with no light and hardly any oxygen (and it’s pretty cold too). Also, other organisms live in deep volcanic vents where the temperature and chemical composition of the surrounding environment is horrendous. So why is it so hard to believe that life on mars or mercury would be entirely plausible?
