Ruby Tuesday, Inc., incorporated on January 19, 1996, owns, operates and franchises the Ruby Tuesday casual dining restaurant chain and operates in the bar and grill segment of the casual dining industry. As of June 3, 2014, the Company owns and operates 668, and franchises 79, Ruby Tuesday restaurants. Of the 79 franchised Ruby Tuesday restaurants, 31 are operated by its domestic franchisees and 48 are operated by its international franchisees. Ruby Tuesday restaurants are present in 45 states, the District of Columbia, 12 foreign countries and Guam. The Company-owned and operated restaurants are concentrated primarily in the southeast, northeast, mid-Atlantic and Midwest of the United States. The Company also owns, operates and franchises the Lime Fresh fast casual restaurant concept.
As of June 3, 2014, there are 20 Company-owned and operated Lime Fresh restaurants and six Lime Fresh restaurants operated by domestic franchisees. The Company closed all 13 Marlin & Ray’s restaurants, the Company’s one Wok Hay restaurant and two Truffles restaurants during fiscal 2013. The Company also operates The Ruby Tuesday Center for Leadership Excellence, located in Maryville, Tennessee Restaurant Support Services Center. The Company operates through two business segments: Ruby Tuesday and Lime Fresh. The Ruby Tuesday segment offers food and beverages under the Ruby Tuesday brand. The Lime Fresh segment offers food and beverages under the Lime Fresh brand.
Ruby Tuesday restaurants offer a range of menu options, including handcrafted classic burgers made with 100% USDA choice beef, chicken options, baby-back ribs, as well as steaks, seafood and appetizers. Its Garden Bar offers approximately 35 salad ingredients. The Company’s Our Classic Burger choices include beef, turkey and chicken offerings. The Company has also introduced Pretzel Burgers and Crispy Flatbreads. It also offers RubyTueGo curbside service and a delivered-meals catering program for businesses, organizations and group events at both Company owned and franchised restaurants.
Lime Fresh is a fast casual fresh Mexican concept with restaurant operations in the Eastern United States, including a concentration in the vicinity of Miami, Florida. The Lime Fresh concept menu features organic food and diverse menu offerings, such as homemade tortilla chips, customizable nachos, flautas, salads, soups, fajitas, quesadillas, tacos, burritos, and salsa and guacamole. As of June 4, 2013, the Company owned and operated 18 Lime Fresh restaurants, and our franchisees operated five domestic and one international Lime Fresh restaurants.
